It all began with a bottle of the Conductor Merlot on my birthday from Tita. I was instantly a fan of this Philip Shaw red wine. I had heard that Orange in Central West New South Wales is a great region for cool climate Shiraz, Merlot, Sauvignon Blanc and Pinot Gris – but hearing about it and tasting oneself are two different things, and I was really taken by this wine. It was a delicious evening for the 25 guests of Australian-New Zealand Chamber of Commerce Philippines (ANZCHAM) and Wine by Chris Urbano (WBCU) tie-up event, Wine@Dampa last October 23^rd, 2014 at Seaside Dampa. The event started at 6:00PM but as early as 4:00PM, Aussie entrepreneur Chris Urbano was already hard at work in the kitchen, checking the produce for the evening, and preparing the meals and the food/wine pairing notes for the evenings main event.
